Chorizo & Sweet Potato PERi-PERi Hash

Poached eggs meet sweet potato, chorizo and PERi-PERi in this breakfast (or brunch…) recipe worth getting out of bed for.

  • 65ml PERi -PERi sauce (choose your flavour)
  • 2 Poached eggs
  • 2 sweet potatoes, peeled and diced
  • 100g chorizo, diced
  • 4 tbsps. olive oil
  • 1 red onion, diced
  • 1 red pepper, diced
  • 50g crumbled feta
  • Small bunch chopped parsley

    Heat oil in a large frying pan and add onion and red pepper. Cook for 5 mins.

    Turn the heat down to medium. Add the chorizo and sweet potato, then cook for 12-15 minutes (until the sweet potato is tender and looking tasty)

    Add PERi-PERi sauce and parsley.

    Finish with poached egg and crumbled feta. Feast.
