Spiced Tomato Soup

  • 8 tbsps Nando’s Garlic PERi-PERi Sauce
  • 12 cherry tomatoes, halved
  • olive oil
  • 4 sprigs thyme
  • 1 onion, roughly chopped
  • 1 tbsp tomato purée
  • 2kg ripe tomatoes (of your choice), roughly chopped
  • 1 litre vegetable stock
  • 1 tbsp sugar
  • 100ml cream

    Preheat the oven to 150°C.

    Place the tomatoes on a roasting tray, cut-side up and drizzle with the Nando's Garlic PERi-PERi Sauce and olive oil. Season with salt and pepper and add the thyme on top.

    Roast in the oven for at least 2 hours

    Fry the onions in olive oil for 2-3 minutes until soft.

    Add the tomato paste and tomatoes and fry for another 2-3 minutes.

    Add the stock, bring to the boil, then reduce the heat and simmer for 3-4 minutes. Blend in a blender to a puree.

    Return the soup to the pan and season to taste with salt, freshly ground black pepper and sugar. Stir in the cream and simmer for one minute.

    To serve, ladle the soup into serving bowls. Top with some roasted tomatoes, drizzle with olive oil and Nando's Garlic PERi-PERi Sauce.

    Tip: Serve with toasted bread rolls topped with melted parmesan cheese.
